Edge-grain Boards
Many species of wood when in an edge-grain board can be very visually pleasing. Edge grain are less likely to absorb moisture at the same rate a End-grain. Edge-grain take very well to epoxy or wood inlays.
Edge-grain boards wear out knife edges faster and show knife marks more readily than end grain.
